I'd also want to be allocating additional disk space from a pool to some of the virtual servers (as a vmdk if possible, otherwise I'll run an VM for NFS serving). Maybe have a BSD VM as an internet gateway (using PF for firewalling) and offering VPN for the rest of the servers. What I'd like to do is start running multiple VMs at the same time, sort of a 'home lab' scenario where I would set up a bunch of machines, play with deploying software via Ansible, have a monitoring server running Nagios, ELK stack etc. I have a Linux VM with p2p stuff that I would run and connect to a VPN within the VM whilst I do other stuff (not on VPN) on my Windows desktop.
